Insulin is the mechanism for controlling glucose in your body. Insulin has receptor sites on both muscle and fat (adipocyte) cells. This makes insulin highly anabolic for bodybuilders (and others trying to gain muscle), but it also makes insulin highly problematic for those trying to lose weight (or to not get fat). When insulin spikes, it clears glucose from the blood by driving it into muscle and fat cells, which results in a sharp decrease in blood glucose levels.
